Berry Chia Pudding with Almond Crunch

Ingredients (Serves 2)

For the Chia Pudding:

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon cinnamon (optional)

For the Berry Topping:

  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 teaspoon maple syrup or honey
  • 1/2 teaspoon lemon juice

For the Almond Crunch:

  • 1/4 cup sliced almonds (or any nuts of choice)
  • 1 tablespoon shredded coconut
  • 1 teaspoon coconut oil
  • 1 teaspoon honey or maple syrup

Instructions

1. Make the Chia Pudding:

  • In a bowl or jar, whisk together chia seeds, almond milk, vanilla extract, maple syrup (or honey), and cinnamon.
  • Let it sit for 5 minutes, then stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours (or overnight) until thick and pudding-like.

2. Prepare the Berry Topping:

  • In a small bowl, mix the berries with maple syrup (or honey) and lemon juice.
  • Mash slightly with a fork to release juices. Set aside.

3. Make the Almond Crunch:

  • In a small pan over medium heat, toast sliced almonds and shredded coconut with coconut oil and honey.
  • Stir for 2-3 minutes until golden brown. Remove from heat and let cool.

4. Assemble & Serve:

  • Spoon the chia pudding into serving bowls or jars.
  • Top with the berry mixture and sprinkle with the almond crunch.
  • Enjoy immediately or store in the fridge for up to 3 days.
