For the Chia Pudding:
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or any milk of choice)
- 1/2 teaspoon vanilla extract
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon cinnamon (optional)
For the Berry Topping:
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
- 1 teaspoon maple syrup or honey
- 1/2 teaspoon lemon juice
For the Almond Crunch:
- 1/4 cup sliced almonds (or any nuts of choice)
- 1 tablespoon shredded coconut
- 1 teaspoon coconut oil
- 1 teaspoon honey or maple syrup
Instructions
1. Make the Chia Pudding:
- In a bowl or jar, whisk together chia seeds, almond milk, vanilla extract, maple syrup (or honey), and cinnamon.
- Let it sit for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 2 hours (or overnight) until thick and pudding-like.
2. Prepare the Berry Topping:
- In a small bowl, mix the berries with maple syrup (or honey) and lemon juice.
- Mash slightly with a fork to release juices. Set aside.
3. Make the Almond Crunch:
- In a small pan over medium heat, toast sliced almonds and shredded coconut with coconut oil and honey.
- Stir for 2-3 minutes until golden brown. Remove from heat and let cool.
4. Assemble & Serve:
- Spoon the chia pudding into serving bowls or jars.
- Top with the berry mixture and sprinkle with the almond crunch.
- Enjoy immediately or store in the fridge for up to 3 days.
