No-Bake Peanut Butter & Dark Chocolate Energy Bites

Ingredients (Makes about 12 bites)

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter (or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup ground flaxseeds or chia seeds
  • 1/3 cup dark chocolate chips (70% cocoa or higher)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon cocoa powder (optional, for extra chocolate flavor)

Instructions

  1. Mix Ingredients:

    • In a large bowl, combine oats, peanut butter, honey (or maple syrup), flaxseeds (or chia seeds), dark chocolate chips, vanilla extract, and sea salt.
    • If using cocoa powder, add it now.
  2. Form Dough:

    • Stir well until everything is evenly combined. If the mixture is too dry, add 1-2 teaspoons of water or more peanut butter.
    • If it's too sticky, add a bit more oats.
  3. Shape into Bites:

    • Use a spoon or cookie scoop to roll the mixture into small bite-sized balls (about 1 inch in diameter).
    • Place them on a lined baking sheet or plate.
  4. Chill:

    • Refrigerate for at least 30 minutes to firm up.
  5. Enjoy & Store:

    • Enjoy immediately or store in an airtight container in the fridge for up to a week.
    • You can also freeze them for up to 3 months.
